Cook 4 to 6 skinless, boneless chicken breasts on
medium high in two tablespoons of butter,
browning on both sides. Cover and turn to low.
In a small bowl combine:
½ cup sour cream
1 tsp. garlic powder
½ tsp. onion powder
½ tsp. chili powder
1 Tbs. Corn starch
3 Tbs. Parmesan cheese (powder)
Blend well, and then stir in 1 can of diced tomatoes.
Return to selections
Add mixture to chicken and simmer on medium low
for 15 minutes.
Stir occasionally so it doesn't scorch.
Serve with warm rolls or mini biscuits.
